Mudpie Cake

100% vegan, 100% delicious. My favourite chocolate cake recipe..


This is the cake that made me decide that recipes are silly. I'm not sure where Mum got the recipe, but apparently it's called mudpie cake because you can mix all of the ingredients in the cake tin.

I am not quite that adventurous.

In any case, it's the sort of cake where you don't need to read ahead - you're not going to get to a point and realise that the eggs needed to be pre-beaten or the butter needs to be pre-melted.


Hooray for vegan cakes that have neither eggs nor butter!


Dump all of the dry ingredients in a bowl, mix 'em, then add the wet ingredients. Mix it all up together.

Have a taste. Delish!

Pour the whole lot into a tin, bake at 180 degrees until it's cooked (this depends on the shape of your tin, but it will come away from the sides and a skewer will come out clean - the usual).

To be honest, I don't usually ice this cake. It's rich enough that a dusting of icing sugar is just perfect.


But sometimes, icing is fun. The cake below has vegan-ish icing - dark chocolate and dairy-free margarine. And the other day I made the most AMAZING (although not vegan) raspberry ganache. But that's a post for another time.



The cake:

1.5 cups plain flour
1 cup sugar
1/4 cup cocoa powder
1 tsp bicarb
1/2 tsp salt
1/3 cup cooking oil
3 tsp vinegar
1 tsp vanilla
1 cup water

mix dry ingredients
add wet ingredients & mix
pour into greased cake tin
bake at 180C for around 40-45 mins
